This dish makes excellent use of fresh, beautiful salmon and is perfect for any night of the week or as a great lunch. Soba noodles cook up very quickly and with the addition of a few fresh or pickled veggies, they become something very elegant very quickly. 

 

Broiled Salmon Soba Salad

Serves 4


INGREDIENTS:

  • 4-6oz salmon
  • 1 lb package of soba noodles
  • ½ cup teriyaki sauce
  • ½ cup green onions, diced
  • ½ cup carrots, shredded
  • ½ cup cilantro, roughly chopped
  • 2 tablespoons ginger, grated
  • 1 tablespoon garlic, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • vegetable oil
  • furikake seasoning
  • salt


DIRECTIONS:

 

  1. Prepare soba noodles as per package instructions. Once cooked, place the noodles in an ice bath to cool, drain, and set aside until needed.
  2. In a mixing bowl, add the green onions, carrots, ginger, garlic, sesame oil, soy sauce, fish sauce, and fresh lime juice. Stir to combine.
  3. Pour the dressing mixture over the noodles and toss to combine. Season with salt if needed. Refrigerate until needed.
  4. Place the salmon fillets onto a well-oiled baking sheet and using a pastry brush, distribute the teriyaki sauce evenly among the fillets, making sure they’re evenly coated. Season with salt and place into pre-heated oven set to broil.
  5. Cook the salmon for approximately 8-10 minutes or until fish is cooked through and the sauce has started to caramelize.
  6. Plate the soba noodles and top with the furikake seasoning and serve with the salmon and additional teriyaki sauce if desired.
