Dungeness crabs are a true delicacy and there's no better way to highlight them than by preparing them using this classic Chinese stir fry technique! The sweet and savory nature of the black bean sauce really helps to pull out all of the natural sweetness from the crab.

 

Dungeness Crab with Black Bean Sauce

serves 4

INGREDIENTS:

  • 4 ct cooked Dungeness crabs*
  • 2 Tbsp canola oil
  • 1 bunch green onions, chopped
  • 1 bunch cilantro, chopped
  • 1 small jar hoisin sauce
  • 2 Tbsp soy sauce
  • 3 Tbsp sesame oil
  • 1 package fermented dry black beans
  • 1/4 cup chile garlic sauce
  • 1/4 cup rice vinegar
  • 2 Tbsp dry sherry or white wine
  • 2 Tbsp honey
  • 1 inch ginger root
  • 4 cloves garlic

DIRECTIONS:

  1. Rinse black beans in cold running water until water runs clear. Puree garlic and ginger in a food processor. Heat sesame oil in a large sauce pan. Add garlic and ginger puree, and cook on low heat for five minutes, stirring constantly. Add remaining ingredients and simmer on low heat for 25 minutes. Be careful not to let it burn. 
  2. Clean the Dungeness crabs by removing the top shell and the gills, then rinse well. Break into sections. Heat the oil to medium high. Stir fry the crab sections until warmed through. Add black bean sauce. Plate and garnish with green onions and cilantro

Substitutes: King crab, snow crab
