When you have the best salmon available it helps to know what to do with it and this seasonal salmon recipe is perfect for grilling season. The bright, sweet, and acidic vinaigrette is perfect with the rich flavor of the grilled salmon. Pair it with your favorite seasonal grilled vegetable (asparagus in the springtime, zucchini or corn in the summer?!) and you’ve got a great weeknight meal or an epic weekend feast that absolutely everybody is going to love.

 

Grilled Atlantic Salmon with Grilled Sweet Vidalia Onion Vinaigrette

Serves 4

INGREDIENTS:

  • 4 4-6oz Salmon Fillets, skin off
  • 1 small Vidalia Onion, cut into half-inch thick rings
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Parsley, finely minced
  • 1 cup Olive Oil
  • 1/3 cup Apple Cider Vinegar
  • Vegetable Oil (for grill)
  • Salt & Pepper

DIRECTIONS:

  1. Combine mustard, vinegar, oil, and parsley in a mixing bowl and whisk to combine. Set aside until needed.
  2. Pat salmon fillets dry with a paper towel and season both the fish and the onion rings generously with salt.
  3. Use the vegetable oil to lightly grease your grill grates.
  4. Place the salmon and the onion rings on the grill over medium-high heat and cook for 3-4 minutes per side or until the salmon is cooked to your desired temperature and the onion rings are sufficiently charred and soft.
  5. Finely mice the onion rings and add the vinaigrette. Season with salt and pepper to taste.
  6. Serve the salmon with the dressing and a side of grilled seasonal vegetables of your choice.
