For some people, the beginning of Soft-Shell Crab season is like a holiday, and really, it's hard to blame them. Not only are these sweet little crabs delicious, they're super simple to make and only require a few ingredients to help take them to the next level!

 

Pan Fried Soft-Shell Crabs

Serves 4

 

INGREDIENTS:

  • 8 ‘hotel-sized’ softshell crabs, dressed
  • ½ cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons canola oil
  • 2 tablespoons butter
  • juice of 1 lemon

DIRECTIONS:

  1. Combine flour, salt and pepper in a bowl. 
  2. Dredge crabs in flour mixture, shake off excess. 
  3. In a large skillet heat butter and oil over medium-high heat until just starting to smoke. 
  4. Add crabs and cook for approximately 2 minutes per side, until golden brown and just cooked through.
  5. Sprinkle with lemon juice and serve with your favorite hot sauce, tartar sauce, or remoulade.
