Our Seafood Recipes

This is a dish for people that love heat! Although, if you’re heat adverse, you can use as little or as much jerk seasoning as you like. Cutting the jerk seasoning with a bit of water to dilute it for the marinating process or using sweet peppers instead of hot peppers in the rice will also help to control the heat level. Either way, you should absolutely give this dish a try because it’s incredibly delicious.

For this, we used the Walkerwood Traditional Jamaican Jerk Seasoning that we sell in our retail stores, but feel free to use whatever jerk seasoning blend you like.

Spicy Jerk Opah with Spicy Cilantro & Lime Rice

Serves 4

INGREDIENTS:

  • 4 4-6oz opah fillets
  • 1 cup white rice
  • 1/4 cup diced red onion
  • 1/4 cup diced red pepper (or hot pepper of your choice)
  • 1/4 diced cilantro
  • 1/2 lime
  • 2 tablespoons fresh lime juice
  • 2-3 tablespoons jerk seasoning
  • Vegetable oil
  • Salt

DIRECTIONS:

  1. Coat the fish fillets in 2 tablespoons of jerk seasoning and allow to marinate up to 30 minutes.
  2. Add rice to a medium sauce pot over medium-hight heat and the amount of water as directed by the package instructions. Add the diced red onion, diced red pepper (or hot pepper), half a lime, and if desired up to 1 tablespoon of jerk seasoning (optional, for additional heat) to the water with the rice and cook as directed. Once the rice is finished, fluff with a fork and stir in fresh cilantro and lime juice.
  3. Place the marinated fillets on a grill over medium high heat and cook for approximately 2-4 minutes per side.
  4. Serve alongside the finished rice and garnish with additional cilantro and lime wedges.
